Roger’s Santa Maria Style Dry Rub is made from an old-time Cowboy Recipe and is primarily used for Santa Maria Beef Tri-Tip; a California Original! They serve Santa Maria Tri-Tip at Cowboy Cook-Outs all up and down California's Central Coast. The traditional preparation calls for Coastal Oak and a Wood-Fired Grill with a mechanical grilling surface that can be raised and lowered: when the fire flares up you raise the grill to keep the Tri-Tip from burning; when the fire dies back down you lower the grill to get some smoke on the meat. Our Tri-Tip recipe method will work with any kind of grill or smoker you have at home: just keep your coals off to one side so you can move the Tri-Tip out of the Direct Heat when the fire flares up!
