Low-Country Style Seafood Rub ~ South Carolina Low-Country Region
Roger’s Low-Country Seafood Rub is the perfect seasoning to try if you want something new and different. It has a flavor that will strike you as very unique if you are a Mid-West BBQ guy or a West-Coaster like I am. Mild and savory with just the right amount of salt. We use this blend on Fish Fillets, Shrimp, Chicken Wings, Boneless Chicken and I shake it on just about everything at the dining table: vegetables or mashed potatoes with butter and Roger's Low-Country Seafood Rub, you name it, scrambled eggs, cottage cheese; this has become my go-to seasoning! We got the isperation for this Rub on our recent trip to Savannah Georgia and Hilton Head Island South Carolina... We had so much awesome seafood, and if you know me you know I couldn't help but ask what they put on it! This is a combination of all the bits and pieces of info I could coerce out of the kitchen staff at a whole string of fine dining establishments we visited on our trip.
We don't have any recipes down on paper yet; but here is how we are using it: Clean your seafood, chicken or vegetables, skprikle with Roger's Low-Country Seasoning. If you are using a skillet: preheat oven to 375 degrees, start on the stove top at medium heat, add 3 tablespoons butter and a bit of avocado oil or walnut oil, cook to desired color on both sides, place in oven until done; maybe 3 to 5 minutes or more if you are cooking a thick piece of chicken, remove the meat to a plate and add a bit more butter to the skillet and stir to make a savory sauce; spoon the sauce over your finished product and serve with a lemon wedge. For the grill just brush with butter while you cook, add a little more spice just before serving.
